At Aromas del Peru, ceviche ranges from salmon and mango in aji amarillo leche de tigre with roasted garlic confit to tuna, salmon, and shrimp in orange, passion fruit, and mandarin with plantain chips.

Ceviche Classico pairs white fish with lime and julienne onions. Ceviche Achorado features rocoto and limo pepper, while Corvina Tiradito layers thinly sliced corvina with acevichado sauce and crispy quinoa.
